Quick Homemade Refrigerator Pickles

You want homemade pickles without all the canning fuss? This is for you. These are quick, easy, and sooooo tasty. All you gotta do is throw all the ingredients together, mix well, and slap ’em in the fridge . Viola! – pickles -homemade by you. Let’s go!

Here’s the recipe:

INGREDIENTS:

  • 7 cups cucumbers, peeled and sliced
  • 1 teaspoon salt
  • 1 cup white sugar
  • 1 cup diced red onion
  • 1 cup cider vinegar
  • 1 teaspoon celery seed

Put the peeled and sliced cucumbers in a large mixing bowl. I left some of the peeling on – adds color and interest.  Add the salt and mix well.

Put the cukes in the fridge for an hour.  While they are hanging out in the fridge, dice your onion, and measure out your other ingredients. When the cukes are done resting in the fridge, get them out, add the diced onion,

sugar,

vinegar,

and celery seed.

Mix well to make sure the sugar dissolves.  And that’s it – you’re done. Put the pickles in a container and refrigerate. I put mine in canning jars so they look pretty.

Your homemade pickles will keep in the fridge for about 3 weeks, if you don’t eat them all by then.

I doubled this recipe as I’m swimming in cucumbers from the garden. And I used onion from the garden too. So satisfying to enjoy the fruits of one’s labor.

    They ~do~ look pretty, I will definitely make some! I didn’t grow up with refrigerator pickles, but it seems everyone native to MD (where I’ve lived for the last 20 years) eats them. I’ve never had measurements before, so NOW maybe I can make them too 🙂 Thanks!

    Mmmm, they look good. My mom used to make something very similar except she combined the sugar and vinegar in a saucepan, heated it to a boil where all the sugar dissolved, then cooled it and put the cucumbers/onion in. Either way, it’s a delicious treat in the hot summer. I’ll bet they won’t last 3 weeks!

      I heard of doing the sugar and vinegar that way, but I tried just mixing it all together cold, and it worked out fine.
      Our pickles aren’t going to last the 3 weeks either.

    Your pickle is cool. And it’s sweet-sour! I must try it. Our Indian pickles come loaded with red chillies, devised to set the tongue on fire. I’m sure your next recipe will be delish too although, being a vegetarian, I fully agree with the look of the chicken in the cartoon.

  9. Those look so yummy and so pretty! This was really my first year with a container vegetable garden, and ours did not produce nearly as well as the ones in the book we purchased on container gardens. lol We still have some work to do before I can start jarring things, I guess.

    My grandmother and mom made refrigerator pickles when I was a kid, and have always loved them. They used white vinegar, sugar, andd sometimes just a bit of water, mixed together cold and popped in cuke slices and onions cut into rings. The onions always go fast around me. Saw this yesterday and had to make up a batch, which we will enjoy with ribs tonight.

    I made these this evening and they are wonderful! I got 2 big mason jars from just 3 big cukes from the Farmer’s market. I also halved some small tomatoes and included them (I remember a Russian friend of mine who made this with cucumbers, tomatoes, onions and red beets – she would also add a little sweet relish… absolute heaven!)

      Did some research on this and you can use a sugar substitute but since they have a sweeter taste you would use less than the recipe calls for. How much less would kinda be up to you and your tastes.

    i made a fresh batch of these this morning..my husband loves these and suggested garlic cloves and peppers so i added a couple of the cloves and i only had a yellow pepper so i added it .. they should be ready for supper tonite..

    I cant remember how many times I have made these.. they are so good.. we had a family reunion last month and I took 2 gallons jars of these.. my jars came home empty and clean as a whistle.. what was left after the meal was divie’d up to take home and the recipe demanded..

    Hello, up late making a batch of these pickles looks great! Well, I did not have enough juice to fill my jars. I used (4) pints so the juice is only 3/4 full on each? What
    went wrong? Is this okay or did I need to double my liquids? Will the top cucumbers be okay?
    This is my first time at this can you tell? Do you have a hot line :)? Really!!! Well, I hope tomorrow they taste good my neighbor gave me these cucumbers out of her garden and I wanted to surprise her with a jar pickles. Thank you

      I would go by the recipe amounts. When I make the I store them in a plastic storage container in the fridge, not in jars because we eat them all within a few days. Hope this helps.

    I was noticing your picture at the top for pickle recipe and your measuring cup is a 2 or three cup so did you double the liquids for the 7 cup cucumbers recipe? And the sugar looks more like 4 cups? This could explain why I did not have enough juice for my jars? Just wondering!! Thank you

      Update to my pickle juice, I just smashed the pickles down into the juice that was in the jars. These pickles are easy and delicious.
