Corn Fritters

If you saw my gingerbread post the other day, you know I’ve been on the hunt lately for recipes for old fashioned pioneer type food.  Corn fritters came to mind, so I started searching for an old recipe, and found one in a 1920’s cookbook. It was one of those cookbooks where everyone in a small town or community donates a recipe to share. So from the ladies of Perry, Kansas to you, here’s a delicious recipe for corn fritters.

INGREDIENTS (Yield 1 dozen fritters)

  • ½ cup flour
  • ½ tsp pepper
  • ½ tsp baking powder
  • ½ tsp salt
  • ¼ cup milk
  • 1 egg
  • ½ tsp oil
  • 8 oz canned whole kernel corn, drained

Put flour in medium mixing bowl,

then add pepper,

baking powder,

and salt.

Mix well. Then pour in milk,

crack open the egg,

and pour in the oil.

Mix until batter is smooth. Add corn and blend into batter.

Heat 3 inches of oil in a large pot to 375F. Drop by rounded tablespoonfuls into oil.

Fry until golden brown, about 5 minutes. Turn midway through.

Remove from oil, and drain on paper towels.

This morning, I had a small plate of these with maple syrup. Mmmmmm……

Later today, we’re supposed to get 8 inches of new snow, so I figured a deserved a tummy filling breakfast.

    I have a stash of cookbooks I’ve collected over the years. Many from chuches my husband and I have visited. The ladies groups generally have done one and have one to give as a thank you gift. Your series here has me thinking I’ll pull those books out and take a look.

  7. I grew up on corn fritters! My mom made them all the time! We loved them! I keep telling my husband about them and keeps telling me to make them! I love them with salt! yum!! This post brings back memories…sitting in the kitchen, watching my mom fry the corn fritter in the yellow deep fryer..she’d dump them on a plate covered with paper towel and we’d immediately salt them. Of course we had to wait while they cooled! Sometimes that would be our lunch!
