Chocolate Date Bars

I copied this recipe out of my mom’s cookbook some years ago. I added chocolate chips.

I need chocolate. We all do. It’s necessary to our sanity.

And if you don’t like dates, that’s too bad. You’ll eat them or you don’t get to leave the table.  Whoops, sorry, I’m channeling my mother.  You can substitute raisins for the dates.

And if you or those you love have a nut allergy, just substitute coconut.

Anywho, here’s how to make Chocolate Date Bars.

Recipe

Preheat oven to 325 degrees

Beat eggs with a whisk until frothy. Add sugar

and butter,

then blend well. Add flour,

salt,

and baking power.

Mix well. Stir in vanilla.

Add dates, nuts, and chocolate chips and mix with a wooden spoon (batter will be stiff).

Pour into a greased 8″ X 8″ pan.

Bake for 25 minutes or until a toothpick inserted in center comes out clean. Cool, cut into bars, and dust with confectioners sugar.

These are great for dessert.    Or for breakfast.    Or for a late night snack.     Or in the middle of the night.

Or because you have a chocolate craving and chocolate is necessary for your sanity.
